Lemon Rice Soup

Description

Vegan version of Avgolemono


Ingredients

Scale
  • 1/2 sm onion (chopped)
  • 1/4 head cabbage (shredded)
  • 1 clove garlic (minced)
  • 1/8 tsp white pepper
  • 1/8 tsp turmeric
  • 2 tbs olive oil
  • 1 1/2 cup brown or white rice (cooked)
  • 4 cups vegetable broth
  • 1/4 cup lemon juice
  • 1/2 tbs tamari
  • 1/4 cup celery (chopped)
  • 1/2 tbs light miso
  • to taste sea or kosher salt

Instructions

  1. Sauté onion, garlic, celery, and spices in oil for 5-8 minutes.
  2. Add cabbage and rice, sauté for about 5 minutes.
  3. Add the lemon juice, miso, tamari, and broth.
  4. Bring to a boil, then simmer for about 30 minutes.
  5. Serve hot.
