Pineapple Curry

A great Indonesian side dish


  • 1 medium pineapple (cored, peeled and cubed)
  • 1 tsp cardamom seeds (whole)
  • 1 tsp cumin seed (whole)
  • 1/2 tsp whole cloves
  • 2 tbs oil
  • 2 ea green onions (cut into 3/4 in pieces)
  • 4 tsp fresh ginger (minced)
  • 1/4 cup macadamia nuts (chopped)
  • 1/2 cup water
  • 1 tsp Sambal ulek
  • 1 Tbs fresh mint (chopped)


  1. In a grinder or mortar and pestle, grind cardamom seeds, coriander seeds, cumin seeds, and cloves.
  2. Heat oil in a pan, add green onions, ginger, macadamia nuts, and spice mixture.
  3. Stir-fry over low heat for 3 minutes.
  4. Add water, sambal ulek, mint, and pineapple and bring to boil.
  5. Reduce heat to low, simmer covered for 10 minutes. or until pineapple is tender but still holding its shape
