Confetti Pasta

Description

Leave out the sausage to make vegetarian

Ingredients

Scale
  • 3 cups pasta (uncooked)
  • 1 cup frozen corn
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup red onion (coarsely chopped)
  • 1 cup asparagus (steamed, cut into 1 inch pieces)
  • 1/2 tsp black pepper (cracked)
  • 1/8-1/4 tsp red pepper flakes
  • 1/2 cup Parmesan cheese (grated)
  • 1 tbs olive oil
  • 2 cloves garlic (minced)
  • 1 cup mushrooms (sliced OPTIONAL)
  • to taste salt
  • 2 links Italian sausage (OPTIONAL)
  • 1/2 tbs oregano (dried)
  • 1 stem fresh rosemary leaves

Instructions

  1. Cook pasta until al dente.Drain.
  2. In a medium frying pan, add olive oil and sauté red onion, garlic, and red bell pepper.
  3. Add black and red pepper, asparagus, pasta, and corn.
  4. Sauté until thoroughly heated.
  5. Remove from pan to plate.
  6. Top with parmesan cheese.
  7. Toss lightly.
