Description

For paleo: Remove corn


Ingredients

Scale
  • 1-2 tbs olive oil
  • 2-3 cloves garlic (minced)
  • 1 medium onion (coarsely chopped)
  • 2 cups zucchini, calabasas or yellow squash (sliced into 1 inch chunks or slices)
  • 1 cup corn
  • 1/4 cup diced tomatoes
  • 1/4 cup veggie broth
  • to taste salt and pepper
  • 1/4 tsp cumin (ground)
  • 1/4 tsp cumin seed (whole)
  • cilantro (GARNISH)

Instructions

  1. Heat oil in sauté pan on medium high heat.
  2. Add onion and garlic and sauté until onion is transparent.
  3. Add zucchini, tomatoes, and broth plus seasonings.
  4. Turn heat to low and simmer until the squash are tender.
  5. Add the corn and cook until the corn is heated.
  6. Top with cilantro when serving.
