Spanish Rice, traditional


  • Yield: 4 cups 1x

Ingredients

Scale
  • 1 cup white rice (uncooked)
  • 1 cup onion (chopped)
  • 2 cloves garlic (minced)
  • 2 tbs coconut or olive oil
  • 2 tbs chili powder
  • 1 tsp cumin seed (slightly crushed)
  • 2 tbs tamari
  • 1/2 12 oz can diced tomatoes
  • 1 1/2 cup water
  • cilantro (coarsely chopped GARNISH)

Instructions

  1. In large skillet, sauté rice, onion, and garlic in oil until rice is light tan.
  2. Add chili powder and comino seed and mix well quickly to prevent rice from burning.
  3. As soon as the rice is tan, add water, tomatoes, and tamari.
  4. Cover tightly.
  5. Reduce heat to low and cook 30 minutes until rice is very dry.
  6. Garnish with Cilantro.
  7. Serve immediately.
