Master Sweet Pickling Brine (with variations)


  • Yield: 2 16 oz jars 1x

Ingredients

Scale

Master Brine

  • 2/3 cup rice vinegar
  • 2/3 cup apple cider vinegar
  • 1/3 cup granulated sugar
  • 2 tbs kosher salt
  • 1 cup water

Variation: turmeric dill

  • 2 sprigs dill
  • 1 tbs yellow mustard seed
  • 1 tbs dill seeds
  • 1 tbs black peppercorns
  • 1/2 tsp ground turmeric

Variation: Tuscan

  • 2 sprigs rosemary
  • 1 tbs black peppercorns
  • 3 cloves garlic

Variation: Zesty

  • 2 sprigs mint
  • 1/4 cup shallot (thinly sliced)
  • 1/4 tsp crushed red pepper flake

Variation: All purpose

  • 2 ea bay leaves
  • 1 tbs caraway seed

Variation: Spicy

  • 1 ea jalapeño (seeded and halved)
  • 2 sprigs tarragon
  • 1 Tbs fennel seed

Instructions

Master

  1. Stir together water and all ingredients in a medium saucepan.
  2. Bring to a boil over high heat, stirring until the sugar dissolves.
  3. Remove from the heat; cool 10 minutes.
  4. Pour over vegetables or fruits.
  5. Cover with a tight fitting lid and chill 2 days.
  6. Store covered in refrigerator upt o 2 months.

Variations

  1. Divide the sprigs of herbs into 2 16oz Mason jars.
  2. Pack jars with fruits or vegetables.
  3. When preparing brine mixture, add the seasonings of choice based on variation desired.
  4. When cool, pour over vegetables or fruit.
