Korintti Ylläkkö (Currant Surprise aka Currant Sneak Attack)

  • Yield: 36 slices 1x


  • 3 1/2 sticks butter (1 3/4 cups)
  • 8 medium eggs
  • 2 cups flour
  • 2 cups sugar
  • 1/2 cup currants (or 1 cup cranberries)
  • 1 small lemon juiced
  • 1 small lemon rind


  1. Preheat oven at 350F.
  2. Grease a bundt or angel food cake pan.
  3. In a large mixing bowl, cream butter.
  4. Add 1 egg at a time while mixing on medium speed with mixer.
  5. While mixing, blend flour and sugar 1Tbs at a time until all is mixed in.
  6. Do not tap bowl.
  7. After flour and sugar are mixed in, add currents 1 Tbs at a time while slowly mixing.
  8. Then add the lemon juice and lightly grated lemon peel into the mixture while mixing.
  9. As soon as all ingredients are well blended, gently fold mixture into the greased pan. DO NOT TAP PAN OR BOWL.
  10. Bake for 45 minutes or until toothpick comes out clean.
