Welsh Rarebit

  • Yield: 8 1x


  • 6-8 oz cheddar cheese (shredded)
  • 1/2 cup milk
  • 1 tsp mustard powder
  • 1 heaped TBS cornflour (or white flour if preferred)
  • 1 medium egg
  • to taste salt and pepper
  • 8-10 slices chewy bread (or 1/2 french bread loaf or English Muffins)


  1. In small bowl, beat the egg.
  2. In a small saucepan, heat the milk and mustard slowly, stirring all the time.
  3. In a small bowl, mix together the cornflour with a small amount of extra milk.
  4. Add the cornflour mixture to the milk mixture in the saucepan and stir.
  5. Add the grated cheese and continue stirring on low heat until it boils and thickens.
  6. Add the egg slowly while stirring.
  7. Remove from heat and allow to cool.
  8. Toast bread on one side.
  9. Spread a liberal amount of the Welsh Rarebit cheese on the untoasted side.
  10. Place under broiler until the cheese is bubbly and beginning to brown.
  11. Serve immediately
