Green Chile-Tortilla Scramble

  • avocado or guacamole (GARNISH)
  • cilantro (GARNISH)


  1. Heat skillet or sauté pan over medium heat for several minutes, then add butter or oil and allow to heat, and then coat pan.
  2. Turn the heat up to medium-high and add the onion.
  3. Sauté until onion is soft and beginning to turn yellow.
  4. Add the chiles, chile powder, salt, and red pepper and cook until the pepper begins to soften.
  5. Add the tortilla strips and cook until tortillas turn a deep brown and become crisp.
  6. Add the meat (if using) and tomatoes and heat until meat is warmed through.
  7. Meanwhile, in a small bowl, break eggs and add milk.
  8. Beat until smooth.
  9. Push the vegetables to one side of the pan.
  10. Pour the eggs into the pan next to the, but not over, the vegetables
  11. Cook until eggs are almost done, stirring while cooking.
  12. When eggs are almost cooked to desired doneness, mix them into the vegetables.
  13. Sprinkle top with cheese, turn heat to low and cover the pan.
  14. Cook until cheese is melted.
  15. Top with chopped cilantro and avocado or guacamole when serving.
