Chimichurri (Argentinian Parsley Sauce)


  • Yield: 4 cups 1x

Ingredients

Scale
  • 3 cups cilantro
  • 1 1/2 cup parsley
  • 1/2 cup fresh oregano
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup lime juice (fresh squeezed)
  • 1 tsp sea salt
  • 1/4 tsp cayenne pepper
  • 4 cloves garlic
  • 1 medium shallot or 1/8 red onion (diced)
  • 1 medium jalapeño (OR 2 small serrano peppers)

Instructions

  1. Remove stems for cilantro, parsley, and oregano.
  2. Place in a food processor with the remaining ingredients and pulse until chopped.
  3. You can puree the mixture if you prefer a smoother consistency.
