Lime-Cumin Vinaigrette

Description

Goes great with Black Bean and Mango Salad (link is below)


Ingredients

Scale
  • 1/4 cup fresh lime juice
  • 1/8 cup rice vinegar
  • 1/8 cup apple cider vinegar
  • 1 tbs honey
  • 1/2 medium jalapeño (minced)
  • 1/4 tsp ground cumin
  • 1/2 tsp flax seed oil
  • 1 cup cilantro (loosely packed, coarsely chopped)
  • 1 1/2 tsp olive oil

Instructions

  1. In a measuring cup, mix the vinaigrette ingredients except for the olive oil and cilantro.
  2. Whisk the ingredients and while whisking, slowly add the olive oil until thoroughly incorporated.
  3. Add the cilantro and allow to stand.
