Low-fat Molasses Cookies

Ingredients

  • 2/3 cup sugar
  • 1/4 cup vegetable or canola oil
  • 1 large egg
  • 1/2 cup molasses (Use less of you like it milder)
  • 2 cups whole wheat flour
  • 1 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1/4 tsp ground cloves
  • 1/2 tsp ground ginger
  • 2 tbs confectioners' sugar (Topping)

Instructions

  1. In a medium bowl, beat together the sugar and oil until well belnded.
  2. Beat in the egg until creamy.
  3. Beat in the molasses until fully incorporated.
  4. In a small bowl, combine the flour, baking soda, cinnamon, salt, ginger, and cloves until well mixed.
  5. Slowly add the flour mixture to the sugar mixture and mix well. (I use my hands to mix it).
  6. Cover and refrigerate at least 2 hours.
  7. Preheat the oven to 350 degrees.
  8. Shape dough into 1 inch balls and roll in the confectioners' sugar.
  9. Place 2 inches apart on baking sheets coated with cooking spray or silpat sheets.
  10. Flatten slightly.
  11. Bake 7-10 minutes until set.
  12. Remove and cool on pan for 1-2 minutes, then move to wire racks to finish cooling.
  13. Store in closed container.
