Cranberry Pecan Cookies

These are a very buttery, shortbread type cookie


  • 2 cups flour
  • 1 tsp baking soda
  • 1 pinch salt
  • 3/4 cup butter (room temperature)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup white sugar
  • 1 1/2 tsp vanilla
  • 1 medium egg
  • 1 cup dried cranberries
  • 1/2 cup pecans (rough chopped)
  • 1-2 Tbs milk


  1. Preheat oven to 350 degrees.
  2. Apply silpat baking sheet or use ungreased cookie sheet pan
  3. In a small bowl combine the flour, baking soda, and salt.
  4. In a separate medium bowl, cream together the butter, brown sugar, white sugar, and vanilla.
  5. Fold in the egg.
  6. Gradually add the wet ingredients to the flour mixture.
  7. Stir in the cranberries and pecans.
  8. Add milk slowly, as necessary, for the dough to hold together
  9. Drop the cookie mixture onto the baking sheet by the teaspoonful or melon baller..
  10. Bake for 11-15-minutes or until light golden brown.
  11. Remove from the oven, allow to sit for 2 (timed) minutes, then remove to a cooling rack.
