Chaat Masala Sauce

  • Yield: 1 cup (24 Tbs) 1x


For a dressing on fruit salad


  • 1 tsp cumin seeds
  • 2 cups water
  • 1 cup jaggery (or coconut sugar)
  • 1/4 cup amchur powder (dried mango powder) (or juice of 1 lemon)
  • 2 tsp ground ginger
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/2 tsp kala namak (black salt)


  1. In a dry skillet, add cumin seeds and stir-fry until brown and fragrant.
  2. Grind the cumin seeds.
  3. Combine all of the ingredients including the freshly ground cumin into a small saucepan over medium heat.
  4. Cook for 25 minutes or until reduced by about half, stirring occasionally.
  5. If you wish it to be thicker, add 1/8 tsp corn starch, stir well and allow to heat over the boiling water for 1 minute.
  6. Allow the mixture to cool down, strain the liquid through a fine strainer and pour into an air-tight container.
  7. Store in the refrigerator for up to one week.
