Thai Curry Topping Sauce

  • 1 medium cucumber, sliced and cut in half
  • 1/4 small red onion, sliced and separated
  • 1/2 red pepper, seeded and finely diced
  • 3 sprinkle salt
  • 1/4 cup vinegar
  • 1/4 cup sugar


  • Mix the vinegar, sugar, salt, and red pepper together.
  • Mix well.
  • In a small bowl, mix the onion and cucumber.
  • Pour the vinegar mixture over the vegetables.
  • Allow to rest at room temperature for at least 15 minutes before using.
  • Place on top of curries when serving.
