Instant Pot Cajun Smothered Pork Chops

Description

This recipe was originally made on the stove but has been adapted to the Instant Pot.

During the Pandemic, a number of people joined a Facebook group, Quarantine Cuisine, where recipes were shared. This was one of the recipes.


Ingredients

Scale
  • 2 bone-in pork chops
  • 1/2 cup mushrooms (we prefer shiitake but any will work)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tbs ghee or oil
  • 1/2 medium onion, chopped
  • 1 tbs butter
  • 1 tbs flour
  • 1 tbs Worcestershire sauce
  • 1 tbs cajun seasoning (We use NOLA Pepper from Red Stick Spice Company)
  • 8 ounces broth
  • 2 tbs water or broth

Instructions

  • Set Instant Pot to Sauté on high and bring up to temperature.
  • Add the ghee or oil and  wait until the ghee has melted and sizzles when tested.
  • Place pork chops on a tray and season with salt, pepper, and the Cajun seasoning on both sides.
  • When the ghee is hot, add the pork chops to the pot and sauté on high about 3-4 minutes per side, until seared well.
  • Remove the pork chops and set aside.
  • Add oil if necessary and make sure it is hot.
  • Add the onions, mushrooms, and 1 tbs cajun seasoning and sauté until the onions begin to clear.
  • Add 2 tbs of the broth and the Worcestershire sauce to deglaze the bottom of the pan.
  • Add the flour and heat, stirring to incorporate the flour into the ghee.
  • Add a small amount of the broth and stir well to a creamy consistency.
  • Place wire trivet in the bottom of the pot on top of the onions and mushrooms.
  • Place the pork chops on the trivet
  • Add the broth.
  • Place the lid on the Instant Pot and set seal.
  • Set for Pressure Cook on high for 15 minutes.
  • Allow natural release for 10 minutes.
  • Remove pork chop and trivet.
  • If necessary to thicken the gravy, set Instant Pot on Sauté, add flour/water slurry and stir while cooking to desired consistency.
