Instant Pot Tandoori Chicken

Description

To get the traditional red color of tandoori, use beetroot powder. We don't care about the color so don't add the powder.


Ingredients

Scale
  • 1 pound chicken thighs, bone-in, skin removed (about 4 thighs)
  • 1 1/2 tbs tandoori masala
  • 1 tbs Paprika or Kashmiri Mirch
  • 1/2 tsp garam masala powder
  • 1/2 tbs besan or flour
  • 3/4 tbs Ginger garlic paste
  • 2 1/2 _ 1 Tbs greek yogurt
  • 1 tbs mustard or olive oil
  • 1 tbs lime juice
  • salt to taste
  • 1/2 tbs beet root powder (OPTIONAL--for color)

Instructions

Steam the Chicken Thighs

  • Wash and pat dry the chicken very well.
  • Massage the thigh with 1 tbs yogurt, a few dashes of kashmiri mirch, salt, and lemon juice.
  • Set chicken aside.
  • Pour 1 cup water into the steel insert of the Instant Pot and place the metal trivet inside the steel pot.
  • Gradually place the chicken thighs on top of the metal trivet.
  • Close the lid of the Instant Pot and set the sea. Pressure cook on high for 11 minutes.
  • Once the cooking cycle is over do a quick pressure release.
  • Open the lid and carefully remove the metal trivet along with the thighs.
  • Set them aside while you prepare the tandoori marinade.

Tandoori marinade

  • In a clean and dry bowl, add the yogurt, olive oil, ginger garlic paste, dry spices, salt, lemon juice, and beetroot powder if using.
  • Mix all the ingredients very well with a fork or whisk until well incorporated.
  • Place the steamed chicken thighs one at a time in the mixture and coat them well on all sides.
  • Leave no gaps.

Broil the chicken

  • Use a cast iron skillet or baking tray
  • Spray the skillet with cooking spray or a few drops of oil
  • Layer the tandoori marinade-coated chicken on the skillet.
  • Broil on high for 7-8 minutes or until you get the desired charred look.
  • Broiling time totally depends on the oven so watch it carefully.
