Instant Pot Italian Pork Chops with Gravy

  • 1 Tbs olive oil
  • 4 medium or 2 large bone-in pork chops (1 1/2-2 inch thick)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp garlic powder
  • 1 medium yellow onion, sliced
  • 8 oz cremini mushrooms (in UK--chestnut mushrooms) sliced
  • 2 cloves garlic, minced
  • 1 cup stock or broth
  • 1 Tbs Italian seasoning (we like Venetian from Red Stick Spice Company)
  • 1/2 cup heavy cream (double cream in UK)
  • 2 tbs cornstarch (cornflour in UK)
  • Parsley--GARNISH


  • Set the Instant Pot to sauté.
  • When the pot indicates HOT, add the oil
  • Season the pork chops with salt, pepper, and garlic powder
  • Add to the hot oil and sear on both sides.
  • Remove the pork chops to a place and set aside.
  • Add the onion and mushrooms to the Instant Pot (add additional oil if necessary) and sauté for 2-3 minutes.
  • Add the garlic and cook for about 30 seconds.
  • Add the stock and deglaze the pot, using a wooden spoon to scrape off any bits stuck to the bottom of the pan.
  • Put the pork chops back into the Instant Pot and sprinkle with the Italian seasoning.
  • Turn off the sauté function. Secure the lid and select Pressure Cook High setting.
  • Set the cooking time for 13-15 minutes (depends on your Instant Pot--we like 13).
  • Allow to Naturally Release for 10 minutes, then quick release.
  • Carefully open the lid and remove the pork chops to a plate, cover to keep warm, and set aside.
  • In a small measuring cup, whisk together 2 tbs water and the corn starch.
  • Press the sauté setting on the Instant Pot and add the heavy cream and cornstarch slurry.
  • Cook for a couple of minutes until the gravy has thickened.
  • Switch off the pot, add the pork chops back in, and spoon the gravy over the chops.
  • Serve over noodles, rice, or potatoes, and top with parsley for garnish.
