Mashed Cauliflower (Easy & Creamy!)

  • Yield: 2 cups 1x


  • 1 large head of cauliflower (6 cups florets cut off stem)
  • 1 tsp olive oil
  • 2 cloves garlic (roasted if you like roasted garlic flavor)
  • 3 tbs butter, unsalted (or reduce salt if using salted butter)
  • 2 Tbs cream cheese
  • 1/2-3/4 tsp sea salt


  • Fill a large saucepan or pot with enought salted water to come right below a steam baket.
  • Bring the water to a boil.
  • Place the cauliflower florets into the steam basket and place on the pan.
  • Bring the water to a simmer and cook, for 10-15 minutes, until the cauliflower is very soft and mushy.
  • Place the cooked cauliflower, garlic, butter, cream cheese, and salt into a food processor
  • Puree for 1-2 minutes until completely smooth
  • Taste an adjust seasoning
