10-Min Mediterranean Tuna Salad (Bold & Healthy)

Description

Can be served in a pita wrap, in lettuce cups, on top of a green salad, or as an appetizer with crackers


Ingredients

Scale

Dressing

  • 1 tsp Dijon mustard
  • 1 lime, zested
  • 1/2 lime juiced
  • 2 tbs extra virgin olive oil
  • 1/4 tsp sumac
  • 1/8 tsp red pepper flakes
  • 1/2 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp white pepper

Tuna Salad

  • 1 can tuna
  • 1 stalk celery, chopped
  • 1 small persian cucumber, chopped
  • 3 medium radishes, chopped
  • 1 green onion, both white and green, chopped
  • 1/8 medium red onion, finely chopped
  • 2 Tbs pitted Kalamata olives, halved
  • 1/3 bunch parsley, chopped (Curly or flat leaf)
  • 1/4 cup chopped mint leaves
  • 1/4 cup slivered almonds

Instructions

Dressing

  • In a small bowl, whisk togethr the ingredients until thoroughly combined
  • Set aside.

Tuna salad

  • In a large bowl, combine all ingredients except almonds.
  • Pour the dressing overe the salad and mix to make sure the tuna salad is evenly coated with teh dressing.
  • Cover and refrigerate for half an hour before serving.
  • When serving, add the almonds and toss to getly refresh the salad.
  • Serve over salad greens, with a pita or with lettuce leaves to make lettuce cups.
