Deconstructed Cabbage Rolls

Cabbage roll ingredients as a two pan meal


  • 3 cloves garlic (minced)
  • 1/2 medium onion (diced)
  • 1/2 medium red bell pepper (diced)
  • 1/2 head cabbage (cut into small bites)
  • 1 cup mushrooms (sliced)
  • 1 tbs olive oil
  • 2 sprig fresh mint
  • 1 tsp sweet smoked paprika
  • 1/2 tsp grated nutmeg (fresh)
  • 1/2 ea fennel bulb (chopped OR substitute 1/2 tsp fennel seed)
  • 1 can diced tomatoes
  • to taste salt & pepper
  • 1/2 tsp smoked salt
  • 1/3 lb ground beef or sausage
  • 4 sprigs oregano
  • 1 1/2 cups brown or white rice (cooked)


  1. In a medium sauté pan, heat oil.
  2. Add the ground beef or sausage and cook until beginning to brown
  3. Add onions, garlic, paprika, and red pepper and sauté until just turning tender.
  4. Add mushrooms, salt, pepper, and nutmeg and sauté until onions start to clear.
  5. Add the cabbage, mint, and fennel.
  6. Add the juice from the tomatoes, cover the pan and simmer until the cabbage is soft.
  7. Add the canned tomatoes (minus juice) and adjust seasoning.
  8. In a separate pan, make the rice.
  9. When the rice is cooked and the vegetables are tender, add the rice to the cabbage mixture in the saute pan and stir thoroughly.
  10. Sprinkle with paprika when serving.
