Green Tomato Salsa

  • Yield: 32 Tbs 1x


Spicy salsa


  • 3-4 large green tomatoes (or 4 cups green cherry tomatoes)
  • 1/2 medium onion (yellow or red, diced)
  • 3/4 medium red bell papper (diced)
  • 1 medium apple (peeled and diced)
  • 6 cloves garlic (minced)
  • 1/2 cup apple cider vinegar
  • 1/4 cup red wine vinegar
  • 1 tbs salt
  • 1-4 medium jalapeños (or to taste)
  • 2 tbs cilantro (chopped)
  • 1 tsp cumin (ground)
  • 1 tbs honey


  1. Cut tomatoes into quarters (if using cherry, cut in half) and place in a non-reactive bowl.
  2. Add the onion and sprinkle with salt.
  3. Allow to sit 1-3 hours, then drain and rinse.
  4. In a medium saucepan, add the tomatoes, onions, bell pepper, garlic, apple, vinegars, and salt.
  5. Bring to boil, then turn down heat and simmer for about an hour.
  6. Add the jalapeños, cilantro and cumin.
  7. Cook another 15 minutes to allow them to soften.
  8. Puree mixture with a stick blender to desired consistency.
  9. Serve cool or room temperature
