Cole Slaw, South African

Description

This is a slightly sweet and savory cole slaw. It is an excellent cooling side for spicy dishes, such as North African Pepper and Tomato Stew (link below) or West African Chicken and Rice (Jollof Rice)


Ingredients

Scale
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dry yellow mustard
  • 1 1/2 tsp celery seed
  • 1 1/2 Tbs brown sugar
  • 1/2 tbs onion (grated)
  • 1/3 cup apple cider vinegar
  • 2 tbs olive or peanut oil
  • 3 cups cabbage (finely chopped or shredded)

Instructions

  1. In a small bowl, combine the first 5 ingredients.
  2. Add the onion and vinegar: mix well.
  3. Whisk in the oil.
  4. Pour dressing over cabbage and mix well.
  5. Cover and chill thoroughly.
