Stuffed Tomato Halves


  • Yield: 4 tomato halves 1x

Ingredients

Scale
  • 2 large tomatoes (Cut in half through stem)
  • 1 small zucchini (grated)
  • 1 ea carrot (grated)
  • 1/4 cup red onion (minced)
  • 1 clove garlic (minced)
  • 1/4 cup lime juice
  • 1/8 cup tamari
  • 1/4 cup red bell pepper (finely chopped)
  • to taste salt
  • 1 tsp tarragon
  • 1 cup brown rice (cooked with miso)
  • to taste ground black pepper
  • 1 tbs olive oil
  • parsley (GARNISH)

Instructions

  1. Cut the top off tomatoes and discard.
  2. Scoop out tomato pulp. Remove seeds and place pulp in a bowl.
  3. Add all other ingredients and mix well.
  4. Stuff into empty tomato shells and refrigerate before serving.
  5. Top with chopped parsley when serving.
