Ambrosia Dessert Salad

  • Yield: 4 cups 1x


A rich fruit salad or dessert


  • 2 cans, small pineapple tidbits
  • 2/3 cup Cooked rice (white (1/3 cup uncooked))
  • 1 can, small Mandarin orange segments
  • 2/3 cup juice from fruit
  • 1 cup sour cream
  • 2 tbs honey
  • 3 ea cardamom pods


  1. In a small saucepan, bring pineapple/orange juice mixture to a boil; add cardamom pods and rice, stirring gently.
  2. Turn heat to low, cover and let cook for 20 minutes.
  3. In medium bowl, combine pineapple and orange segments.
  4. Add cooled rice to fruit.
  5. Add sour cream and honey.
  6. Stir gently to coat fruit.
  7. Allow to chill several hours before serving.
