New Mexican Cottontail Salad

Surprising Combination


Ingredients

Scale
  • 1 lb carrots (shredded)
  • 1/4 cup dried apricots (chopped)
  • 1/2 cup cucumber (Peeled and diced) (can substitute green grapes)
  • 3 Tbs lemon juice
  • 2 tbs olive oil
  • 2 cloves garlic (crushed and minced)
  • 2 tsp honey
  • 1/2 tsp cumin (ground)
  • 1/2 tsp red chile powder
  • 1 tbs mint, fresh (finely chopped)
  • to taste salt & pepper

Instructions

  1. In a large bowl, toss all of the ingredients together.
  2. Refrigerate for several hours before serving.
