Thai Peanut Green Curry Shrimp

Ingredients

Scale
  • 2 cloves garlic (minced)
  • 1 tbs fresh ginger (minced)
  • 1 + 1/2 Tbs green curry paste
  • 1/2 tsp turmeric
  • 2 medium green onions (chopped)
  • 1 tbs soy sauce or coconut aminos
  • 1 1/2 tbs peanut butter
  • 1 cup coconut milk
  • 3/4 + 1/4 cups broth
  • 1 tsp corn starch
  • 1 cup broccoli florets
  • 1 cup zucchini (sliced)
  • 4-6 medium mushrooms (sliced)
  • 1/2 medium red bell pepper (cut into 1 inch pieces)
  • 1/4 cup cilantro (chopped)
  • 6-10 ea per person shrimp (pre-cooked)
  • 1 ea lime , juiced
  • cilantro (chopped GARNISH)
  • peanuts (chopped GARNISH)

Instructions

  1. Heat coconut oil in a sauce pan over medium heat.
  2. Add the garlic, minced ginger, and green onion.
  3. Cook for about 1 minute.
  4. Add 1 tbsp green curry paste and turmeric.
  5. Stir to mix, then add soy sauce and peanut butter and mix together well.
  6. Add 3/4 cup broth and coconut milk.
  7. Stir well, then add the last of the curry paste.
  8. Allow to simmer on low heat
  9. In small bowl, mix corn starch and 1/4 cup broth.
  10. Add to saucepan and allow to simmer until begins to thicken.
  11. Add the broccoli, red pepper, mushrooms, and zucchini, and stir well.
  12. Allow to simmer 3-5 minutes, then add chopped cilantro and mix.
  13. Allow to simmer until happy with the consistency.
  14. Add in the pre-ccoked shrimp and heat until warm.
  15. Add lime juice before serving.
  16. Top with chopped peanuts
  17. Serve over noodles.
