Asian Coleslaw


  • Yield: 4 1x

Ingredients

Scale
  • 1/4 small Napa cabbage or Bok choy
  • 1 medium carrot
  • 1 ea green onion (thinly sliced on diagonal)
  • 1/4 medium red bell pepper
  • 1 large clove garlic (minced)
  • 2 tsp tamari
  • 2 tsp rice vinegar
  • 1 inch fresh ginger root (minced)
  • 1/4 tsp sesame oil
  • 1/8 tsp crushed red pepper flake
  • 1/8 cup cilantro (chopped)
  • 1/8 cup toasted almonds (halved or slivered)

Instructions

  1. In a food processor, chop cabbage and red pepper.
  2. Empty into a large bowl.
  3. In the food processor, grate carrots.
  4. Add to bowl.
  5. Also add onions, garlic, and cilantro
  6. In a small bowl, whisk together dressing ingredients.
  7. Pour over slaw.
  8. Toss well.
  9. Serve at room temperature or chilled, tossing again just before serving.
  10. Sprinkle almonds on top when serving
