Oven Baked Sausages with Potatoes, Vegetable AND Gravy!

Description

This concept could be used with other meats, including pork chops, tenderloin or chicken.


Ingredients

Scale

Vegetables

  • 1 1/2 lbs baby potatoes (halved)
  • 6 ea carrots (cut into 2 inch pieces)
  • 1 medium onion (cut into 8 wedges)
  • 4 cloves garlic (minced)
  • 2 tbs olive oil
  • 2 tsp thyme (dried)
  • 1 tsp oregano (dried)
  • to taste salt & pepper
  • 2 stalks celery (cut into 2 inch pieces)

Gravy

  • 2 tbs melted butter
  • 2 1/2 tbs flour
  • 2 cups veggie broth
  • 2 tbs dark miso

Meat

  • 5 ea sausages of choice (brats, mild Italian or other meat, such as pork chops, tenderloin or chicken)
  • 1 tbs olive oil or spray (OPTIONAL)
  • 2-3 sprigs fresh thyme (GARNISH)

Instructions

Vegetables & Meat

  1. Preheat oven to 400 degrees.
  2. Place vegetable ingredients and seasonings in a large bowl.Toss well to coat.
  3. Add meat and toss briefly.
  4. Transfer into a roasting or braising pan. (Pan should be big enough so the vegetables are stacked about 2 deep).Rearrange so meat is on the top.

Gravy

  1. In the same bowl used for the vegetables, add butter and flour.Whisk.
  2. Add a bit of broth with miso and whisk, then whisk in remaining broth with miso. (Don't worry if you end up with some floating butter bits)
  3. Pour down the side of the pan (don't pour over the meat or veggies).

Baking

  1. Bake 25 minutes.
  2. Turn meat.Optional: add a little oil to the meat.
  3. Bake for another 25 minutes or until meat is browned and potatoes are soft.
  4. Garnish with fresh thyme leaves when serving.
