Sautéed Asparagus, Tomatoes, and Red Onion with Sausage

Leave out the sausage if you want it vegetarian

Can be served warm over polenta or pasta
Can be served cold as a salad--best without the sausage

  • 1 Tbs olive oil
  • 1/2 cup red onion (sliced into wedges)
  • 3 cups asparagus (cut into 2 inch pieces)
  • 2 cups tomato wedges (or 1 can diced)
  • each juice fresh lemon
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 2 cloves garlic (minced)
  • 1 stem rosemary, fresh
  • 1/4 cup kalamata olives (sliced)
  • 2 links Italian sausage (sliced or ground OPTIONAL)


  1. In a large skillet, heat the oil over medium-high heat.
  2. Add the onions and rosemary (if using sausage, add now); cook, stirring until onions are just transparent, about 2 minutes.
  3. Add the garlic and asparagus; cook, stirring until asparagus is almost tender-crisp, about 3 minutes.
  4. Add the tomatoes and olives; cook stirring, until tomatoes are softened and the asparagus are tender-crisp, about 2 minutes.
  5. Stir in the lemon juice, salt, and pepper.
  6. Serve over or with polenta or pasta and parmesan cheese
  7. Variation: Chill the vegetables and toss with 2 Tbs. white wine vinegar.
