Strawberry Banana Muffins

Ingredients

  • 1/2 cup unsalted butter or ghee (melted)
  • 2 large eggs (lightly beaten)
  • 1 tsp vanilla extract
  • 2 large ripe bananas (mashed (about 1 cup))
  • 1 cup fresh strawberries (cut into bite size pieces)
  • 2 1/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon (ground)
  • 1/2 tsp salt (fine grain)

Instructions

  1. Preheat oven to 350 degrees.Place the oven rack in the center of the oven.
  2. Line a muffin pan with paper liners or spray the muffin cups with vegetable spray or use silicone cups.
  3. In a small saucepan, melt the butter.Let cool to room temperature.
  4. In a medium-sized bowl, whisk together the eggs, vanilla, and mashed banana.
  5. Add the melted butter and stir to combine.
  6. In a separate large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  7. Add the wet ingredients to the dry ingredients and sitr only until the ingredients are just combined.
  8. Fold in the berries. DO NOT OVERMIX.
  9. Using two spoons or an ice cream scoop, divide the batter evenly among the muffin cups.
  10. Place in the oven and bake until a tester inserted in the center of a muffin comes out clean, about 20-25 minutes.
  11. Transfer to a wire rack to cool.
  12. Can be stored for a few days at room temperature.
