English Pea Salad


  • Yield: 6 cups 1x

Ingredients

Scale

Dressing

  • 1/3 cup sour cream
  • 1 tbs mayonnaise
  • 1/4 tsp salt
  • to taste fresh ground black pepper
  • 1 Tbs white or apple cider vinegar
  • 2 tsp sugar

Salad

  • 4 cups green peas (frozen or fresh shelled)
  • 8 slices bacon (cooked until crisp and chopped Can substitute ham chunks)
  • 1/2 small red onion (diced)
  • 6 oz cheddar cheese (cut into small cubes)
  • 3 tbs fresh parsley (minced)
  • 10 small cornichons (chopped)

Instructions

Dressing

  1. Mix the sour cream, mayonnaise, salt, pepper, sugar, and vinegar together in a small bowl or cup. Adjust seasoning.
    Set aside

Salad

  1. Stir 2/3 of the dressing into the peas until the peas are coated.Cover and refrigerate 2-4 hours before serving.
    Remove from the refrigerator and stir in the rest of the dressing to your liking.
    Sprinkle with more parsley before serving.
  2. Gently stir in the bacon, onion, cheese, cornichons, and parsley until all combined.
  3. Taste and adjust seasonings.
