Green Chile Stew

Description

This recipe is vegetarian, but you can add pork if you want meat


Ingredients

Scale
  • 1 tbs olive oil
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 3 stalks celery (chopped)
  • 1/2 tsp turmeric
  • 1 tsp red chili powder
  • 1/4 tsp cinnamon
  • 1 tbs oregano (dried)
  • 1 tsp cumin (ground)
  • 6 cups veggie broth
  • 2 medium white potatoes (coarsely chopped)
  • 1 large sweet potato (cut into 1/2 inch pieces)
  • 1 cup corn
  • 1 cup green peas
  • 1 can green chiles (diced)
  • 1 tbs molasses
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 Tbs toasted pepitas (GARNISH)
  • 1/2 cup crema (GARNISH)

Instructions

  1. In a medium pot cook white potatoes in vegetable broth until very soft.
  2. In another pan, while potatoes are cooking, sauté onions, celery, and garlic in oil.
  3. Add turmeric, chili powder, cinnamon, oregano, cumin, salt, and pepper.
  4. Cook until onions are clear.Remove from heat and set aside.
  5. When potatoes are soft, pour most of the broth into pan with sautéed vegetables and spices.
  6. Using a potato masher coarsely mash the potatoes in the pot with a small amount of broth (you can do this in a food processor if you like).
  7. Add to sautéed vegetables.
  8. Add remaining ingredients and simmer over low heat until sweet potatoes are tender.
  9. Top with dollops of crema and pepitas when servin
