Pork Chops with Rice

  • Yield: 4 servings 1x


  • 1 medium onion (diced)
  • 2-3 cloves garlic (minded)
  • 3 large pork chops (or 1 lb chops)
  • 2 tbs olive oil
  • 2 cups rice (uncooked)
  • to taste salt and pepper
  • 1 1/2 tsp chili powder
  • 1 can diced tomatoes
  • water to equal 4 cups when added to tomatoes


  1. In heavy skillet, heat oil and add onions and garlic.
  2. Cook until onions begin to clear, then add chops and brown.
  3. Add rice, salt, pepper and chili powder.
  4. Cook until rice begins to turn color.
  5. Add tomatoes and water.
  6. Cover and turn down heat to low.
  7. Cook until water is absorbed and rice is tender.
