Al Pastor de dos Osos (Slow Cooker)

Ingredients

Scale
  • 1 can green chiles (whole)
  • 1 can pineapple (sliced or chunks)
  • 1 tbs salt
  • 1 tbs adobo
  • 1 tbs achiote
  • 1 tbs chili powder
  • 1 tsp cinnamon
  • 1 tbs oregano (dried)
  • 1 tbs cumin (ground)
  • 4 cloves garlic (minced)
  • 1 tbs white wine vinegar
  • 3 lbs pork roast
  • 1 small onion (cut into thick half rings)
  • 1/4 medium white onion (Chopped--GARNISH)
  • 1/2 cup cilantro (Chopped--GARNISH)
  • corn tortillas

Instructions

Pork

  1. In blender: add juice from pineapple, the green chiles with juice and all spices and blend until mixed well.
  2. Place onions in the crock pot, place pork on top of onions and pour in marinade.
  3. Cook on low for 5-8 hours, or on high 3-4 hours until pork in tender and easy to pull.

Pineapple

  1. Method 1: grill pineapple rings on grill.
  2. Method 2: Heat skillet to hot on medium high heat. Add a small amount of butter or ghee. Add pineapple and cook until carmelized

To serve

  1. Serve with tortillas and top with pineapple, cilantro and onion.
