Description

For Vegan, omit sausage


Ingredients

Scale
  • 2 tbs coconut oil
  • 4 cloves garlic (minced)
  • 1/2 medium onion (diced)
  • 2 stalks celery (chopped)
  • 1/2 medium red bell pepper (diced)
  • 4 cups cauliflower (riced or box grated)
  • 1 tbs fresh thyme (chopped)
  • 1 medium bay leaf
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1/2 tsp chili powder
  • 1 tsp cumin (ground)
  • 1 cup vegetable stock
  • 1-2 links Spicy sausage (Andouille or jalapeno, casing removed)

Instructions

  1. Heat oil over medium heat in a large skillet.
  2. Add garlic, onion, celery, and peppers and sauté until soft.
  3. Add sausage. Cook until sausage no longer pink.
  4. Stir in cauliflower.
  5. Add thyme, bay leaf, salt, pepper, chili, and cumin. Stir to coat.
  6. Add in stock.
  7. Allow to simmer over medium-low heat, stirring occasionally, for 30 minutes or so or until liquid is cooked down.
  8. For vegan: Omit sausage
