Quinoa Tabouli

  • Yield: 3 cups 1x


  • 1/2 cup quinoa (we prefer red but white works as well)
  • 1 cup water
  • 2 medium plum tomatoes (diced, seeds removed)
  • 1/3 cup lemon juice
  • 3 tbs olive oil
  • 2 tbs soy sauce
  • 2 ea scallions (chopped)
  • 1 bunch parsley (chopped)
  • 2 tbs fresh mint (minced)
  • to taste salt & pepper



  1. Place water and quinoa in a small saucepan over medium-high heat and bring to a boil.
  2. When boiling, turn heat to low and simmer, covered, about 15 minutes.


  1. Mix together the lemon juice, olive oil, soy sauce, and salt and pepper in a small bowl until well combined.
  2. Place the vegetables, herbs, and quinoa in a large bowl.
  3. Pour dressing over vegetables and mix well.
  4. Allow to sit for an hour before serving.
