Basil/Mint Cucumber and Pea Salad

  • Yield: 3 cups 1x


  • 2 cups cucumber (peeled, chopped and seeded)
  • 1/4 cup red bell pepper (chopped)
  • 1 cup peas
  • 3 tbs fresh basil (chopped)
  • 1 tbs fresh mint (chopped)
  • 4 tbs yogurt (plain)
  • 1 tbs mayonnaise
  • to taste salt & fresh ground black pepper


  1. In a medium bowl, toss together the cucumber, peas, red pepper, basil, and mint.
  2. In a small bowl, stir together the yogurt, mayonnaise, salt , and black pepper.
  3. Pour the dressing over the salad and toss.
  4. Allow to sit at least 15 minutes for peas to thaw if using frozen.
  5. Sprinkle coarse ground pepper over top when serving.
