Indian Green Beans


  • Yield: 3 cups 1x

Ingredients

Scale
  • 2 lbs green beans (cut into 2 inch pieces)
  • 1 medium onion (coarsley chopped)
  • 2 cloves garlic (minced)
  • 1 inch fresh ginger (peeled and minced)
  • 1 can diced tomatoes
  • to taste salt & pepper
  • 1 tsp turmeric
  • 1-2 tbs ghee
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1 tsp whole cumin seed
  • 1 tsp black mustard seed
  • 1-3 ea dried chili piquin
  • 1 medium lemon, juiced
  • 3-5 ea curry leaves

Instructions

  1. In a blender, process onion, garlic, ginger, turmeric, coriander, ground cumin and a small amount of water into a paste.
  2. Heat 1/2 of the ghee over medium high heat.
  3. Add the paste and sauté until warm.
  4. Add the green beans and tomatoes.
  5. Simmer until gree beans are tender.
  6. In a separate pan, heat the remaining ghee.
  7. Add the cumin and mustard seeds, and the chilies and sauté until the mustard seeds stop popping.
  8. Add the curry leaves and remove from the heat.
  9. Add the spices to the beans, mix to coat.
  10. Top with lemon juice when wervine.
