Maque Choux with Tomatoes


  • Yield: 4 cups 1x

Ingredients

  • 1 1/2 cups white or yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup red bell pepper (chopped)
  • 1 tbs butter or ghee
  • 1 can diced tomatoes (drained)
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp ground red pepper
  • 4 cups corn, fresh or frozen

Instructions

  1. In a 3-quart saucepan cook onion, garlic and red pepper in butter/ghee about 5 minutes or until tender.
  2. Stir in corn, tomato, salt, black and red pepper.
  3. Cover and cook over low heat about 20 minutes or until corn is tender.
