Chocolate Chip Coconut Bars

Ingredients

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup shredded unsweetened coconut
  • 1 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar (or low carb sweetener if paleo)
  • 2 medium eggs (lightly beaten)
  • 1/2 cup whole milk (or almond milk if low carb)
  • 1 1/2 tsp molasses
  • 1 1/2 tsp vanilla extract
  • 1/2 cup chocolate chips of choice (sugar free if paleo)

Instructions

  1. In a medium mixing bowl, combine almond meal, coconut flour, coconut, xanthan gum, baking powder, and salt.
  2. Mix ingredients to combine.
  3. In a small bowl, combine butter, eggs, milk, brown sugar, molasses and vanilla and whisk together.
  4. Pour butter mixture into dry mix and stir together until well combined.
  5. Spread into a greased 8 X 8 baking pan
  6. Bake at 350 degrees for about 25-30 minutes.
  7. Remove from oven and allow to cool in pan on a cooling rack.
