Cajun Cake

Ingredients

Cake

  • 2 cups all-purpose flour
  • 2 medium eggs
  • 1 20 oz can crushed pineapple (undrained)
  • 1 1/2 cups sugar
  • 1 1/2-2 tsp baking soda

Icing

  • 1/2 cup butter
  • 1 3 oz can evaporated milk
  • 1 cup coconut (grated)
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup pecans

Instructions

Cake

  1. Mix all cake ingredients by hand for 1 minute.
  2. Place in a greased 11X14 inch pan.
  3. Bake 40 minutes at 300 degrees or 25 minutes at 350 degrees.
  4. Do not overbake.
  5. Remove from oven and spread cake with icing.

Icing

  1. Mix the butter, evaporated milk, and sugar in a saucepan.
  2. Boil for 5 minutes, stirring occasionally.
  3. Add the vanilla, nuts, and coconut.
  4. Spread on warm cake.
  5. Allow cake to rest until cool before cutting
