Corn and Barley Salad with Cilantro Dressing


  • Yield: 4 cups 1x

Ingredients

Scale
  • 1/2 cup barley
  • 1 1/2 cup frozen or fresh corn
  • 1/2 cup red bell pepper (chopped)
  • 1/8 cup green onion (sliced)

Dressing

  • 1/4 cup fresh cilantro (chopped)
  • 1/8 cup onion (chopped)
  • 1 medium lime , juiced
  • 1 small jalapeño (minced)
  • 1/4 tsp sea salt
  • 2 clove garlic (minced)
  • 1/4 cup olive oil (extra virgin)

Instructions

  1. In a medium saucepan, combine water and barley, and simmer until water is absorbed.
  2. In a large mixing bowl combine cooked barley, corn, pepper and green onion.
  3. For the dressing combine all ingredients, cover and shake well.
  4. Pour dressing over salad, refrigerate and serve chilled.
