Tamale Pie

Description

You can make this vegetarian by substituting black or pinto beans instead of ground meat

Ingredients

Scale
  • 1 1/2 pound lean ground beef
  • 1/4 cup onion (chopped)
  • 1 can diced tomatoes (drained)
  • 2 medium carrots (diced)
  • 1 tbs chili powder
  • 3 cloves garlic (minced)
  • 1 tsp oregano (dried)
  • 1/2 tsp cumin (ground)
  • 1 small can green chilies (chopped)
  • 1/2 cup mexican blend cheese (grated or shredded)
  • 1 pkg cornbread mix

Instructions

  1. Over medium heat, sauté meat, onions, and garlic until meat browned.
  2. Drain oil.
  3. Add seasonings and mix thoroughly.
  4. Add tomatoes, carrots, and chilies and cook about 20 minutes.
  5. In a bowl, mix cornbread mix.
  6. In a casserole, place meat mixture.
  7. Top with cheese.
  8. Pour a thin layer of cornbread mix over top and spread evenly (about 1/2-3/4 of the mix).
  9. Bake at 400 degrees for about 15 minutes.
  10. Bake leftover cornbread batter in separate pan and freeze.
