Copycat P.F. Chang's Singapore Street Noodles

We don't like lightly cooked tomatoes, so we substitute pineapple (the not gold type) to get the necessary acid.




  • 16 oz rice noodles (uncooked)
  • 1 tsp dark sesame oil
  • 1 bunch scallions, green parts only (cut into 2 inch lengths)
  • 1/4 bunch cilantro (chopped)
  • 2 cups water or broth (boiling)


  • 1 Tbs rice wine vinegar
  • 2 tsp curry powder
  • 1 pinch turmeric
  • 2 tbs soy sauce
  • 4 tbs oyster sauce
  • 1 tbs sriracha sauce
  • 1 tbs creamy peanut butter

Meat & vegetables

  • 8 oz shrimp (peeled and deveined)
  • 8 oz chicken breasts (sliced OR used pre-cooked)
  • 1 tbs minced garlic (or garlic/ginger paste)
  • 1 cup Napa cabbage (sliced thin)
  • 1/2 cup carrot (julienned or shredded)
  • 2 medium tomatoes (into chunks OPTIONAL (we substitute pineapple))
  • 1 medium lime (cut into fourths--TOPPING)
  • 2 tbs avocado, peanut or coconut oil
  • 2 tbs peanuts (chopped GARNISH)



  1. Boil rice stick noodles for 2 minutes or until just soft.
  2. Rinse under hot water and drain.
  3. Toss noodles with 1/2 of the scallions, cilantro and sesame oil.


  1. In a small mixing bowl, mix together vinegar, curry powder, and turmeric until blended into a paste.
  2. Add the soy sauce, oyster sauce, sriracha, and peanut butter and mix well.
  3. Set aside until needed.

Meat and Vegetables

  1. Heat oil over medium heat, then add chicken (unless using pre-cooked) and cook until no longer pink.
  2. Add shrimp and stir fry until cooked through.
  3. Remove from heat and set aside.
  4. Add garlic, cabbage, and carrots and cook for 1 minute.
  5. Stir in sauce mixture until everything is evenly coated.
  6. Add the tomatoes (or pineapple), shrimp, and chicken and cook for 1-2 minutes until the dish is heated through.


  1. Place noodles in a bowl. Top with the shrimp/chicken and vegetable mixture
  2. Garnish with chopped cilantro, scallions, and peanuts
