Deconstructed Middle Eastern Kebabs

Ingredients

Kebabs

  • 1 lb ground beef
  • 1 tbs fresh parsley
  • 1/2 tsp thyme (dried)
  • 1/4 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Vegetables

  • 1/2 medium onion (cut into small wedges, then separated)
  • 2 medium zucchini (cut into 1/2 inch slices)
  • 1/2 medium red pepper (cut into 1/2 inch pieces)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp oregano
  • 1/4 tsp cumin
  • 2 tbs olive oil

GARNISHES

  • Tahini (OPTIONAL)
  • Tzaziki (OPTIONAL)

Instructions

Kebabs

  1. Mix all ingredients by hand or in a food processor until well combined
  2. Shape like 8 hotdogs about 3 inches long
  3. Set aside.

Vegetables

  1. Preheat oven to 400 degrees.
  2. Place vegetables in a large bowl and sprinkle with olive oil.
  3. Add the salt, pepper, oregano and cumin and toss to coat the vegetable.
  4. Place vegetables on a large cooking sheet and spread out to form a single layer.
  5. Place in the oven and bake for 15 minutes.
  6. Remove and add the kebabs to the baking sheet.
  7. Return to the oven and bake an additional 20 minutes.
  8. Remove from the oven and serve with Tahini or Tzaziki. Excellent served with Yellow Rice.
