Fresh Beans with Ham/Sausage


  • Yield: 8 cups 1x

Description

You can use this with any fresh bean/peas or you can use dried lima beans that have been soaked overnight.


Ingredients

Scale
  • 1 pkg large lima beans, white
  • 1 ea ham bone or 1 link smoked sausage, cut into 1 inch rounds
  • 1 medium onion (chopped)
  • 3 ea bay leaves
  • 3 cloves garlic (minced)
  • 1 tbs oregano (dried)
  • 1 tsp black pepper
  • 1 tbs savory (finely chopped) or 1 1/2 tsp dried
  • 6-8 cups water or broth
  • 2 cups kale (torn) (OPTIONAL)

Instructions

  1. Clean the beans of any debris and rinse under running water.
  2. Put all the ingredients in a large pot and cover with water plus 1 inch.
  3. Over high heat, bring the beans to a boil.
  4. Lower the heat and simmer about 1 hour until the beans are tender or 3-5 hours if using dried
  5. About 30 minutes before the beans are done, add kale if using.
  6. Serve with biscuits or cornbread (see link below to cornbread recipes).
