Pumpkin Pecan Bread with Pecan Glaze

  • Yield: 12 thick slices 1x

Depending on how thick you cut the slices, it makes about 12 slices.
You can leave the glaze off and the bread is still yummy and perhaps more appropriate as a breakfast bread.

We usually make it 4 small loaf pans-each pan is 3 slices. If using small loaf pans, decrease cooking time to about 45-50 minutes.

  • 3 /4 cup brown sugar
  • 3/4 cup white sugar
  • 1/2 cup oil (we prefer coconut oil but vegetable oil works fine)
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 tsp baking soda
  • 2 tsp cinnamon (ground)
  • 1 tsp nutmeg (ground)
  • 1/2 tsp allspice
  • 1/4 tsp ground cloves
  • 3/4  tsp salt (fine)
  • 1 3/4 cup flour
  • 1/3 cup milk
  • 1/2 cup pecans (coarsely chopped)

  • 1 tbs butter or ghee
  • 2 Tbs brown sugar
  • 1 tbs milk
  • 1/4 tsp vanilla extract
  • 1/4 cup powdered sugar
  • 24 pecan halves or coarsely chopped

  1. Preheat oven to 350 degrees (325 convection)
  2. Beat together the sugars and oil.
  3. Add the eggs and beat until light.
  4. Add the pumpkin and beat until mixed in.
  5. In a separate bowl, stir together the baking soda, cinnamon, nutmeg, allspice, clove, salt, and flour.
  6. Add the dry ingredients to the pumpkin mixture alternately with the milk.
  7. Spoon the batter into a greased and sugared (or floured) 9 X 5 loaf pan.
  8. Bake for 65-70 minutes. DO NOT OVER BAKE.
  9. Remove from the oven and let cool in the pan for 15 minutes.
  10. Flip out onto a wire rack and cool completely

  1. In a small saucepan, melt the butter on medium-low heat.
  2. Add the sugar and milk.
  3. Bring to a boil for 1 minute.
  4. Whisk in the powdered sugar and vanilla until smooth.
  5. Allow to cool. If it becomes solid before you are ready to use it, just gently reheat until liquid but not boiling.
  6. Place bread on a wire rack over a pan.
  7. Spoon or pour the glaze slowly over the top.
  8. Top with the pecan pieces.
  9. Allow the glaze to set--about 5 minutes before serving.
