Gingerbread Men Cookies (Kid baking friendly)

Description

Chewy, no chill that are easy to make with kid help.


Ingredients

  • 1/2 cup unsalted butter (slightly softened) ( 1 stick)
  • 1/2 cup dark brown sugar (firmly packed)
  • 1/2 cup molasses
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 tbs ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line two baking sheets with parchment paper or silpat baking sheets or spray with non-stick cooking spray.
  3. In a medium bowl, beat the butter and brown sugar with a mixer until smooth.
  4. Add the molasses and vanilla and mix until well combined.
  5. Beat in the egg.
  6. In a separate large bowl, place flour, ginger, cinnamon, baking powder, baking soda, and salt.
  7. Mix the dry ingredients together until well combined.
  8. Add the wet ingredients to the dry ingedients and mix until it is well combined.
  9. Divide the dough into half or thirds.
  10. On a lightly floured surface, roll the dough to 1/4 inch thickness.
  11. Using a gingerbread man cookie cutter, cut out the gingerbread men.
  12. Transfer to the baking sheets and bake for 9-13 minutes or until they start to crisp around the edges.
  13. Remove from the oven and allow to cool on the baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
  14. Once the cookies are cooled, decorate with cookie icing and candies.
