German Cucumber Salad


  • Yield: 2 cups 1x

Ingredients

Scale
  • 1 large cucumber (washed, peeled and thinly sliced (about 2 cups))
  • 1/2 cup red onion (thinly sliced)

Dressing

  • 1/3 cup sour cream or yogurt
  • 1/2 tsp dijon mustard
  • 1 tbs white or apple cider vinegar
  • 1 tbs milk
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 2 tbs fresh dill ( finely chopped)

Instructions

Dressing

  1. In a medium bowl, whisk together sour cream, mustard, vinegar, milk, salt, pepper, and dill until combined.

Salad

  1. Add sliced cucumbers and onions and gently stir to coat evenly.
  2. Cover and refrigerate at least 1 hour before serving.
